Improve tacky tomato pasta with gnocchi, chorizo and mozzarella for a comforting bake that makes a superb midweek meal
- 1 tbsp olive oil
- 1 onion , finely chopped
- 2 garlic cloves , crushed
- 120g chorizo , diced
- 2 x 400g cans chopped tomatoes
- 1 tsp caster sugar
- 600g recent gnocchi
- 125g mozzarella ball, minimize into chunks
- small bunch of basil , torn
- inexperienced salad , to serve
- STEP 1
Warmth the oil in a medium pan over a medium warmth. Fry the onion and garlic for 8-10 minutes till smooth. Add the chorizo and fry for five minutes extra. Tip within the tomatoes and sugar, and season. Carry to a simmer, then add the gnocchi and prepare dinner for 8 minutes, stirring typically, till smooth. Warmth the grill to excessive.
- STEP 2
Stir ¾ of the mozzarella and many of the basil by the gnocchi. Divide the combination between six ovenproof ramekins, or put in a single baking dish. High with the remaining mozzarella, then grill for 3 minutes, or till the cheese is melted and golden. Season, scatter over the remaining basil and serve with inexperienced salad.
