Roasted Cauliflower with Parmesan and Pancetta

A far tastier version of traditional cauliflower cheese with an Italian twist.


Ingredients

1 head cauliflower, cut into pieces
60g piece pancetta, diced
55g butter
40g plain flour
375ml milk
1 clove garlic, whole
1 tsp red chilli flakes
100g grated Parmesan cheese
1/4 tsp salt
1/4 tsp freshly ground black pepper
1/8 tsp freshly grated nutmeg
30g breadcrumbs
